Menu Plan Monday 6/30

I haven't done a menu plan for a couple of weeks now for various reasons. I figured it was time to get back on track, but this week isn't exactly normal for us- we'll be eating out three nights in a row! :)

TUESDAY: *new recipe* Awesome Baked Pork Chops, potatoes, steamed veggie mix
WEDNESDAY: crockpot BBQ chicken, corn on the cob
THURSDAY: eating out with friends
FRIDAY: dinner at a family event
SATURDAY: dinner at my cousin's wedding reception

Check out more menu plans~ Menu Plan Monday is usually hosted by I'm An Organizing Junkie, but since she's on vacation this week, you'll find it HERE instead.

P.S. I'm still trying to adjust the new header image... the sidebars overlapping it are bugging me!

Under Construction Again

I've decided to redo this template again, so please bear with me today (Monday) as I change out the graphics and tweak the template. As I type, I have a lime green sidebar overlapping an orange header-- yikes!! :) It will be fixed shortly.

Ramen Tuna Casserole for One

I enjoy tuna, my DH does not, therefore you won't see tuna on my menu very often. However, since Jenn at Frugal Upstate is hosting this great frugal food series, I couldn't resist adding in one of the cheapest and easiest recipes I know using this week's ingredient of tuna: tuna casserole for one. I actually can share this for lunch with my two small children and it makes enough for the three of us, all for about one dollar. It doesn't get much more frugal than that!
Quick Ramen Tuna Casserole for One
one block chicken flavored ramen noodles & flavor packet
one small can tuna, drained
one and a half cups water
3 TBSP grated Parmasean cheese
1 tsp. margarine
to taste: garlic pepper, parsley
Break up noodles and cook per directions. Stir in remaining ingredients and enjoy!
And in the spirit of giving proper credit where it's due, I got the original recipe here. What I've typed above is my version of the original.
