Family Favorite: Crockpot Vegetable Soup

This is my own recipe, basically learned from my mom, but now tweaked to suit my (and my husband's) taste. Mom always saved all the leftover vegetables in the freezer, until the container was full. I do that, too... but sometimes we don't have enough leftover vegetables to make soup when we want it, so I came up with this combination of canned veggies that also works well. You could always add/subtract any veggies that you like... green beans, etc. The soup has a tomato broth that we love... credit for that goes to mom. There's nothing better than coming home on a cold day and smelling this soup!
Amy's Easy Homemade Vegetable Soup
2 cans diced tomatoes
2 - 20oz cans Veg-All Homestyle (big chunks of potatoes, carrots, etc.)
1 can corn1 lb stew meat, cubed (Optional- I would leave it out, but DH prefers to have meat in the soup. It will cook in the crockpot. You can brown it if you prefer, but it will cook just fine in the broth.)
2 TBSP cilantro
2 TBSP dried onion flakes
2 TBSP Mrs. Dash
OPTIONAL: a small can of tomato sauce, to make a richer broth

Place stew meat in bottom of crockpot, add dried onion and Mrs. Dash. Dump in the canned vegetables and tomato sauce, top with cilantro. Fill the crockpot the rest of the way with water. Cover and cook on low all day (8 hours or more).

Souptacular Crockpotalooza: Potato Soup

Potato soup is one of my favorites- I like to make a big pot and eat it for lunch all week. This is my very own recipe, put together after much trial and error. I've also published it on RecipeZaar, so it's possible that you may have seen it there.


Amy's Potato Soup:
Ingredients:
5-6 large potatoes, cubed
1 large onion, diced
2 tablespoons margarine
3 chicken bouillon cubes (I use bouillon paste when possible, about 2-3 TBSP)
3 tablespoons parsley
2 tablespoons cilantro
3 cups water

Place all of the above ingredients into the crockpot, cook on low all day.
About an hour before serving time, add in either:


1 (12 ounce) can evaporated milk
1/4 cup flour

OR, as I more often do, add in about a cup of whatever kind of milk you have on hand and a sprinkle of instant potato flakes.

Garnish with:
shredded cheese or French-fried onions or croutons
Enjoy!

Spaghetti Sauce: FIF Sauce Edition

Well, true to my pattern lately, I'm a day late for the Favorite Ingredient Friday: Sauces Edition. Oh well, I'll share my spaghetti sauce recipe anyway! ;) This is a recipe that has evolved over time in my kitchen, geared to not be too garlic-y for my DH, and also not have too much meat for me. (I actually prefer meatless sauces, but DH has to have meat in his.)

Amy's Crockpot Spaghetti Sauce
1 lbs ground beef, browned and drained
1 large onion, chopped and cooked with the beef
2 small cans sliced mushrooms
2 (14 ounce) cans diced tomatoes (do not drain)
2 (14 ounce) cans tomato sauce
2 tablespoons dried Italian Seasoning
1 tablespoon Garlic Pepper
1 tablespoon sugar
Combine all ingredients in crockpot and simmer on low all day.
This sauce works great with any kind of pasta you have on hand.

The Chicken Experiment

Last week, as I mentioned, I tried an experiment in the crockpot. It worked out really well, and I'll definitely be making it again. My 2 year-old ate two helpings. And the best part? It was SO easy!


Amy's Crockpot Ranchero Chicken
2 cans Campbell's Creamy Ranchero Tomato Soup (found at Big Lots for $.90 a can)
1 lb. chicken breasts
1 bag frozen peppers & onions

Place chicken in the crockpot and cover with both cans of soup. Cook on low all day. About an hour before serving time, break the chicken up into bite-sized pieces and stir in the peppers & onions. Cook another hour or until peppers and onions are done.
Serve over top of cooked pasta.

Unfortunately, I have read that Campbell's is not going to make this soup any more. I read on the Campbell's site that you can substitute a can of tomato soup and a heaping spoonful of salsa in any recipe that used that soup.

My Mom's BBQ Ribs

My mom's BBQ Ribs:
3-5 lbs boneless spare ribs
1 bottle favorite BBQ sauce (we like the spicy Kroger brand)
salt & pepper, to taste
Place ribs in crockpot, season to taste. Cook on low all day (do not add any liquids). About an hour before serving time, drain liquid that has accumulated, and pour in BBQ sauce.

This is my family's favorite way to have ribs-- so easy and tasty!

Frugal Foods: whole roast chicken

Have you checked out Jenn at Frugal Upstate's series on frugal foods yet? Past topics have included eggs, tuna, beans, and ground beef. This week's ingredient is chicken-- specifically, whole chickens or wings or thighs. Here's my favorite frugal whole chicken recipe:

Crockpot Roast Chicken
1 3-4lb. whole chicken (I usually wait and buy these on clearance)
Season All Seasoning Salt
1 chopped onion
chopped garlic to taste (1 TBSP or so)
Place several golfball-sized balls of foil in the bottom of your crockpot. (This keeps the chicken from getting soggy from sitting in the juices.) Rinse chicken and pat dry. Place onion & garlic in cavity of chicken. Rub all outer surfaces of chicken with seasoned salt. Place in crockpot on top of foil balls, and cook on low all day.

My family thinks this tastes just like the roasted chicken you can buy in the grocery store deli- but this version is much cheaper! :)

Here's another frugal chicken recipe I use often... it actually uses chicken tenders, but I'm sure it would work with thighs, as well. Check out the Chicken Hurry recipe previously posted on this blog.

P.S. Added 7/15/08: I made one of these last week, and for the price of a $3.59 chicken, it was three meals for my family. The first night, we had the chicken with stuffing and a veggie. The second night my husband ate his plain, the kids and I chopped ours up and added it into some soup. The third night, I used all the leftover bits in a pasta dish. Three meals for a family of four from a $3.59 chicken... that's what I call frugal! :)
(And yes I know I should have boiled the bones for broth, but I just didn't have time last week.)

Meatball Subs: crockpot & freezer recipe

This is a great recipe to pop in the crockpot and enjoy later in the day. You can also make the meatballs ahead of time and freeze them, so I thought I'd share it as a part of both Freezer Food Friday AND Slow Cooking Thursday. FFF is new to me, and I haven't done SCT in quite a while... my silly job keeps interfering with this fun stuff! ;)


Meatball Subs

For the meatballs:



  • 1 lb lean ground beef


  • 1/2 cup dry bread crumbs (I also add a small amount of oatmeal.)


  • 1 small onion, diced


  • 1 dash Worsterchire sauce


  • 1 dash onion powder


  • 1 dash salt


  • 1 egg


  • 1 TBSP grated Parmesean cheese



1 large (approx. 32 oz.) jar of your favorite spaghetti sauce




6-8 sub or hoagie buns






  1. Combine all meatball ingredients in a large bowl and mix thoroughly.


  2. Shape into walnut-sized balls and place on a cookie sheet.


  3. Cook meatballs: either bake at 400 for 20 minutes or so, or, microwave until done-- it takes about 8 minutes in my microwave.


  4. (May freeze at this point by placing meatballs on a foil-lined cookie sheet and freezing. After frozen, remove from cookie sheet and place into zip-top bag.)


  5. Place meatballs in crockpot and cover with sauce. Cook on low for 4-6 hours.


  6. To make subs: place meatballs and sauce on buns, top as desired, and enjoy!


  7. Optional: I like to toast the buns with a little butter and garlic salt, and then top the meatballs with sliced mozzarella cheese and broil until melted.





    P.S. I'm not sure what the problem is, but the font sizes in this entry keep changing from microscopic to huge on me. I can't find anything in the HTML to explain this. I hope you can read it!

Crockpot Corn Chowder

Here's what we're having for supper tonight-- my version of the recipe "Easy Potato and Corn Chowder". Even my DH, who isn't big on soups, likes this one. We'll have grilled cheese or turkey sandwiches along with it for an easy meal.
Crockpot Corn Chowder
1 can corn
1 can creamed corn
6 pieces bacon, cooked & crumbled (I use "real bacon pieces" from a bag.)
1 16oz. bag cubed hash brown potatoes
1 onion, diced
1 cup milk
For garnish: chopped green onions, shredded cheddar cheese
Combine all ingredients in crockpot and cook on low all day- 6-8 hours. Garnish as desired, serve, and enjoy!

Crockpot Italian Roast

Here's what we had for supper tonight:

Crockpot Italian Roast
1- 4-5 pound roast
1 can tomato soup
1/2 cup water
1 TBSP Italian seasoning *
1 TBSP Parsley*
2 TBSP dried minced onion*
* All seasoning amounts are guesstimates, as I never really measure. Adjust to suit your taste!

Place roast in crockpot. Mix soup and water, and pour over roast. Sprinkle seasonings over top. Cook on low 7-8 hours.


May also sear roast and cook on high for 4 hours-- that's what I did today, and it came out great. I usually serve this with pasta or potatoes and green beans.

SUNDAY: We had a corn/potato/bacon chowder and ham roll-ups. I'll have to post the recipe later... I started out with one, but I added & changed a lot by the time it was done! ;)


MONDAY: *family favorite* Buffalo Chicken Sandwiches, homemade baked fries

* We'll be topping the sandwiches with some of the leftover Blue Cheese Spread from Saturday, when I had a Stampin' Up party. The spread was really good on celery & crackers, and I think it will be perfect on these sandwiches!


TUESDAY:*new recipe* Chicken Casserole , biscuits


WEDNESDAY: bratwurst, potato salad, baked apples


THURSDAY: *new recipe* Sour Cream Casserole and peas


FRIDAY: Crockpot BBQ Ribs, corn

Slow Cooking Thursday: French Dip Sandwiches





This is one of my favorite sandwiches. You don't taste the beer at all, but the meat comes out tender and juicy.

French Dip Sandwiches
1 3-4lb roast
1 envelope onion soup mix
1 bottle of beer (your choice, though I wouldn't use a dark one)
4-6 hoagie rolls
Optional: cheese (we like provolone), peppers, onions


Place roast in crockpot, sprinkle in soup mix, and then pour beer over top. Cook on low all day (6-8 hours). Shred meat with a fork and serve on hoagie rolls.

Use the juice as a dip,"au jous" style.

Optional: We like to serve these with sauted peppers and onions and slices of provolone or other kinds of cheese on toasted buns.

NOTES FROM LAST WEEK: I wound up creating my own Ham & Hash Brown Casserole recipe instead of using the one I'd picked out-- I posted my version here. The Crockpot Beef & Noodles would have been boring as written, but with added onions, celery, and mushrooms, it was OK. And I didn't get to make the Pizza Casserole... I'll save that one for another time.

Crockpot Ham & Hash Browns- my way

I had a couple of different recipes for ham/hash brown casseroles that I was considering yesterday. Then I decided it would simplify things if I just threw something into my crockpot. I didn't have a recipe for exactly what I wanted, so this is what I came up with:

Amy's Crockpot Ham & Hash Browns

1 28oz bag diced hash browns with peppers & onions
1 1-lb. package diced ham (fully cooked)
2 cans cream of mushroom soup
2 cups shredded cheddar cheese
2 tsp. garlic pepper
1 tsp. onion powder

Stir everything together in crockpot and cook on low for 3-4 hours.

That's it! It was easy to throw together. It could have used some more seasoning, or maybe some more chopped onions... but at any rate, it was good comfort food. My husband had ketchup on his (ick!) and then topped it with jalapeno peppers.

NOTES FROM LAST WEEK: We enjoyed the Crockpot Cajun Chicken Pasta, but I changed the recipe a bit to spice it up.

  • SUNDAY: We had a family favorite: Copycat Beef Meximelts and my Layered Ranch Taco Dip (Yes, I've become addicted to these Meximelts. I think I've made them four times in the last month!)
  • MONDAY: *new recipe* Deluxe Potato Ham Bake, Steamed Broccoli, Crescent Rolls, Applesauce
  • TUESDAY: Salisbury Steak, Mashed Potatoes, Mixed Green/Yellow Beans
  • WEDNESDAY: *new recipe* Impossible Pizza Pie and tossed salad
  • THURSDAY: *new recipe* Crockpot Beef & Noodles (I plan to tweak this a bit, adding onions and mushrooms.) and Green Beans
  • FRIDAY: BBQ ribettes and corn

Menu Plan Monday 10/15

NOTES: Normally I start out with notes from last week, but I don't have any, because last week I was recovering from a minor surgery and I hardly cooked at all, let alone made any sort of menu plan. We ate a lot of fast food and "heat and eat" kinds of things... not good for the waistline or the budget! But, it's a new week, so here's my plan:

SUNDAY: We had turkey-bacon wraps (turkey, bacon, cheese, and ranch dressing in a tortilla) along with this *new recipe*: Hearty Cream of Tomato Basil Soup. The soup was wonderful- I'll definitely be making it again!

MONDAY: Easy Buffalo Chicken Sandwiches (made from chicken patties) and *new recipe* Baked Macaroni & Cheese with Stewed Tomatoes


TUESDAY: Cottage Pie and Biscuits or Cornbread

Cottage Pie
1 lb. ground beef
1 onion, diced
1 packet of brown gravy mix
4 cups mashed potatoes, prepared (I use instant or leftovers)
1 can green beans, drained
Optional: 1 small can mushroom pieces- add in with green beans if desired

Brown ground beef and onion in skillet, drain well. Combine gravy mix with amount of water specified on package. Add gravy to beef and onions, and simmer until thickened. Spray a casserole dish (I use a glass pie plate) with non-stick cooking spray, and spread meat mixture in the bottom of the dish. Top with green beans, then mashed potatoes. (Sometimes I sprinkle the top with shredded cheddar cheese.) Bake casserole at 350 for 20-25 minutes until bubbly.



WEDNESDAY: *new recipe*: Slow Cooker Cajun Chicken Pasta and Peas

THURSDAY: Steak Fajitas with all the fixins' and corn

FRIDAY: Lasagna (frozen), Garlic Bread, Steamed Broccoli

SATURDAY: I always leave Saturdays open.

Oriental Baked Chicken

I am still alive, LOL... just not cooking this week following my surgery last week. Tonight, though, I'm hungry for this Oriental Baked Chicken that we just tried two weeks ago for the first time. I'm going to pop it in the crockpot this afternoon for about four hours and see how that works out rather than baking it in the oven.

Oriental Baked Chicken

1 can tomato soup
3 tablespoons vinegar (I use red wine vinegar.)
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
1 lb chicken parts (The original recipe calls for two pounds, but one pound of chicken tenders is plenty to feed my family and have lots of extra yummy sauce for our rice.)

Combine all except chicken. Spray a casserole dish with cooking spray and arrange chicken pieces. Cover with sauce. Cover with foil and bake at 375 for 45-60 minutes, or until juices run clear.
UPDATED TO ANSWER QUESTIONS: It worked OK in the crockpot, but I definitely like it better baked. The sauce stayed very thin... it probably could have been thickened with cornstarch, but I didn't try that. The baked version gets my vote. And no, I don't add water chesnuts to my rice, but I'm sure you could! :)

The sauce is great served over rice. Last time I served this with rice, spring mixed veggies, and pineapple chunks-- and I'll probably do the same tonight! :)

Menu Plan Monday 10/1

As usual, I've done my menu planning on Sunday, so I'm posting this a little bit early! :)

NOTES FROM LAST WEEK: It was a good week in my kitchen- all the new recipes I tried were good! :) The Oriental Baked Chicken and Beef Meximelts were both wonderful. The Flaky Chicken Wraps were good- I was surprised at how much flavor they had with so few ingredients.


I didn't do all the Weight Watchers points this week as I'm still trying to clear out some of the pantry and freezer, and 99% of these meals come from there. So, until I use up what we've got on hand, I'll have to just watch my portion control.

  • SUNDAY: kielbasa , corn, parslied noodles
  • MONDAY: meatloaf, mashed potatoes, green beans
  • TUESDAY: new recipe: Quick Chicken Divan (Thanks for the recipe, Barb!) and biscuits. This meal was held over from last week-- we wound up eating out one night.
  • WEDNESDAY (soccer night): Ham Steaks, Peas, & new recipe Baked Macaroni & Cheese with Stewed Tomatoes
  • THURSDAY: family favorite: my Mom's Crockpot BBQ Ribs, with mini ears of corn on the cob and sugar-free applesauce
  • FRIDAY: family favorite: crockpot Chicken for the Gods with wild rice and steamed broccoli
  • SATURDAY: I always leave Saturday open for meals we skipped during the week.

Menu Plan Monday 9/23

OK, so I'm actually posting this Sunday afternoon... close enough! :)

No notes from last week, as we didn't eat much of anything that wasn't a heat-and-eat kind of meal... I definitely didn't feel like doing any cooking. We're back to feeling healthy this week, though, so I'll be doing "real" meals again! :)

Weight Watcher points are included when I have the nutritional info available to calculate them. Some of my meals are a little high on points this week, but I'm trying to avoid going to the grocery store, so I'm using up what's on hand.

SUNDAY: new recipe: Oriental Baked Chicken over white rice (4pts) with steamed broccoli (opts) and pineapple chunks (1pt) *Note: the points for the chicken as written would be 14! But, I'll be using half the chicken and making other adjustments to reduce points to less than half that amount.

MONDAY: new recipe: Copycat Taco Bell Meximelts (5pts each) with stewed tomatoes (0pts)

TUESDAY: new recipe: Flaky Chicken Wraps (8pts) and mini ears of corn on the cob (2pts)

WEDNESDAY (soccer game night): family favorite: meatball subs in the crockpot (10pts as written- I'll sub lean meat and less cheese to lower points) and chips

THURSDAY: new recipe: Quick Chicken Divan (Thanks for the recipe, Barb!) and biscuits

FRIDAY: pot roast in the crockpot with gravy, mashed potatoes (2pts) and green beans (opts)

Menu Plan Monday 9/10/07

It's been a busy couple of days here, and it's now almost 4:30pm on Monday and I haven't had time to sit down and make my normal detailed menu plan. (I usually do it on Sunday afternoons.) So, here's the quick version-- it definitely reflects the busy week ahead! I'm higher than I'd like to be on WW points, so this menu might get changed later in the week to get the points down some.

NOTES FROM LAST WEEK: The crockpot Pepper Steak (5pts) was absolutely delicious-- see my last entry for the complete recipe along with my adaptations. We didn't care for the crockpot ranch potatoes & chicken-- we found it too bland, even though I added extra seasonings.

This week:

  • MONDAY: It's a "Heat and Eat" night: frozen lasagna (6pts), garlic bread (4pts), green beans (0pts)
  • TUESDAY: new recipe: crockpot spicy chicken subs (7pts using chicken breast meat & including buns) and mini ears of corn on the cob (2pts)
  • WEDNESDAY: new recipe: baked cube steaks (5pts), mashed potatoes (2pts), green beans (0pts)
  • THURSDAY: crockpot salsa chicken (6pts) over rice (3pts) (or in flour tortillas, 3pts) and with stewed tomatoes (0pts)
  • FRIDAY: tuna helper augratin (6pts) and peas (2pts) --- This meal in particular is likely to change... but I always keep one "pantry meal" like this on hand for rushed days!

Crockpot Pepper Steak

This was a new recipe on our menu this week, and it was SO good! :) It's definitely a keeper. I'm posting the original recipe (copied from the forums at Boot Camp Buddies- posted by Jacque at this link) along with my notes in red... you know I can't ever follow a recipe the way it's written, LOL! :)

SO-EASY CROCKPOT PEPPER STEAK

2 lbs round steak, cut into strips or cubes (I had one pound of meat, and left the 4 small round steaks whole rather than chopping them up.)
Salt & Pepper
1 14.5oz can Italian Diced Tomatoes (mine were plain)
1 6oz can Tomato Paste (I used 8oz tomato sauce)
1 tbs Hot Sauce (I left this out for the kids... DH spiced his plate up with fresh hot chilis)
16oz bag frozen pepper & onion mix (sometimes called Fajita mix)
Italian seasoning, to taste-- as suggested by the original poster-- I just sprinkled some after the sauce layer.

Put the meat in the bottom of the slow cooker, sprinkle with salt & pepper. In a bowl, mix together diced tomatoes, tomato paste and hot sauce. (I didn't mix anything, just poured it all in the crockpot one on top of another.) Pour over meat. Place frozen vegetables on top. Cover and cook on Low for approx. 8 hours. Mix together and serve over noodles or rice, or your choice. (I had wild rice.)

Divided into 6 servings, would be approx. 6 points, plus noodles or rice. Jacque used 1lb and got 4 servings for 5 points. (I used 1lb of meat also, assuming 5 points per serving.)


This one will definitely be repeated in our house... very tasty and simple, especially for being such a low-points recipe!
