Tortilla Eggs

OK, after a brief bloggy break, I think I'm ready to start talking about cooking again. ;)

Jenn @ Frugal Upstate is hosting a Frugal Food series, and part one (Posted June 9th, but I just found it today!) was all about eggs. There are tons of great egg recipes linked up already- go check it out!

I love eggs and have them a couple of times per week for breakfast. I like them scrambled, fried, made into omlettes, and pretty much any other way they can be made. One of my favorite ways to make them, though, is a recipe called Tortilla Eggs... below is my from-memory version.

Tortilla Eggs
1 large flour tortilla
olive or canola oil
2-3 large eggs
salsa to taste
Place your smallest skillet on medium-high heat and pour in 2-3 TBSP. of oil. While the oil heats, tear the tortilla into bite-sized pieces. Fry the tortilla pieces in oil until very lightly browned and crisp. Drain oil, and place tortillas on paper towels briefly to drain. Return tortillas to skillet, and crack eggs into skillet as well. Add in salt and pepper if desired. Stir quickly together, cooking over medium heat until eggs are set. Pour everything onto a plate and top with salsa. Enjoy! :)

I have heard these called Migas and Chiquilles, not sure which is right, but at any rate, they're a great treat!

Edited 4/14/09 to add: CHEESE! I can't believe I didn't mention to top these with some shredded cheese when I originally posted this... I think a good sharp cheddar is perfect with the salsa. :)
