The Great Bloggy Giveaway Carnival

Photo Sharing and Video Hosting at Photobucket Well, I guess there's no better way to break in the new blog than to bribe people into commenting, is there? LOL!

Since this is my new cooking blog and all, I'm giving away one new copy of "The Soup Mix Gourmet". It's a big thick book full of recipes that all include, you guessed it, soup mixes.

Oh, I love food more than most things in this world, but I'd have to say that my favorite meal is homemade Shrimp Etouffee. My husband is from cajun country, so when we started dating I added a few cajun dishes to my repertoire. Here's the recipe I use. Yum!

My favorite recipe is roasted asparagus....Spray the cookie sheet with cooking spray, put the asparagus on it, sprinkle with salt and pepper, and cook at 400 degrees for about 15 minutes. While it is cooking, in a sauce pan on the stove melt 2 Tbls butter...cook for about two minutes until it is a nice golden brown color. Add 1 Tbls of soy sauce and 1 Tbls of balsamic vinegar. Pour over the asparagus...so yummy!

My favorite meal is Golden Au Gratin Potatoes, and just about anything I make to go with it. They are so yummy! We usually have it at holidays, so with a nice roasted turkey breast and a few other sides, we're good to go!

Well, my favorite food is pizza and I can't have that anymore due to allergies.

However, I can share a delicious recipe for green bean salad: steam fresh green beans, make a viniagrette of olive oil, vinegar & a smidge of mustard. I add italian herbs, salt & pepper (shake all together in a jar). To this you can add diced onion, garlic, even things like chopped olives or anything of an italian nature. :) Chill, mix & eat!

I love cookbooks. Please include me. My favorite home-cooked recipe is my mom's lasagna. And this is it:

Brown 1 lb of ground beef. Drain off the fat and add 3 cans of tomato sauce and 1 or 2 packages of spaghetti seasoning mix (your choice on type and number of packets, but I use 2, and usually the "thick and zesty" type). Simmer this until needed.

Boil 12 lasagna noodles (this is about 3 more than you really need, just in case some tear) in salted water until soft. Drain.

In a 9x13 pan, spray the bottom with cooking spray. Place a layer of noodles, a thin to moderate layer of the sauce, a layer of swiss cheese, a layer of cottage cheese (large curd), a layer of mozzarella cheese, a layer of noodles, sauce, noodles, sauce. Sprinkle with shredded mozzarella or parmesan cheese. Bake at 350 for about 30 minutes.

The cottage cheese makes all the difference in the world. All my ricotta-eating friends say this is the best lasagna they've ever had and are shocked to find out it's cottage cheese instead of ricotta. If you try this recipe, I hope you love it as much as I do. :)

My favorite homecooked meal is roast, rice and dark gravy with corn on the cob, and smothered green beans.

Unfortunately for something I love so much, I have no recipe for any of these things.

Let's top it off with one of my favorite desserts, dutch apple pie.

I tried to find my recipe for this, but I searched and searched -- coming up with nothing. If I find it, I send it to you later : )

I don't neccesarily like to cook or have a favorite recipe, but I have 7 kids, so I have to cook!
I do cook from scratch some and the kids and my dh love it. I think my most famous meal around here is either french dip braid or alfredo pizza.
I'd love to be entered into your contest. And I like the restriction, it eliminates some of the competition!

I'm not a very good cook to be honest. I also don't eat so my favorite thing is roasted potatoes. I prefer red, but white work as well. All you have to do is cut the potatoes into chunks. Then put them in a roasting pan, fill with some oil & cook. I'm sure you already know hot to make them. I think the correct way is in the pan with like Turkey or something, lol. They take about an hour to make. So good! Sorry I don't have a good recipe for you, but I have been checking out your blog :)

I love Food. So, picking my favorite is so hard. I guess if it's my mother cooking I LOVE her chicken noodle soup (oh, is it good. It took me 32 years before my mother would share her recipe with me..lol..)

I bookmarked you because your slow cooking Thursday feature caught my eye. My favorite home cooked meal is a chicken pie, not pot pie because it does not have veggies in it. I always serve fresh steamed broccoli on the side and then mix it all up together. I have to make two full size pies to feed the hungry, love this recipe Mom, sons I have. My favorite home cooked meal is chicken patties, which I make from shredded cooked chicken, shredded cheese, some bread crumbs, and a little oil. Mix it up and make into patties and cook them on the electric skillet. Yumm! Perfect with mashed potatoes. :)

Count me in ... my fav recipe is Stuffed Green Peppers!

6 small green peppers
1 lb ground beef
1/2 cup cooked rice (well, I do 1 cup cooked rice - I think this should say 1@ cup uncooked rice)
1/2 tsp. salt
dash pepper
1 slightly beaten egg
2 Tbsp. minced onion
1 can tomato soup

Steam peppers in 1 cup boiling water for 5 minutes. Drain. Cut top off pepper and remove the insides.
Brown meat. Drain ft, and rinse.
Add rice, salt, pepper, egg, onion and 1/2 can of soup. Mix well and fill peppers. Add small amount of milk to remaining soup. Pour over peppers and bake at 350 for 45 minutes.

We all love it in my house (although, admittedly, the kids leave the pepper as a bowl and do not eat it and the adults do LOL!)

I know this sounds like I'm just buttering you up, but the truth is my favorite homemade meal is potato soup. Yum. And some fresh right out of the oven bread to top it off. Sour dough probably would be the very best!

...that would be on a nice cold winter day by the way.

One of my favorite meals is seafood enchiladas made cheap!

I use imitation crap meat and frozen shrimp. I mix sour cream, seafood seasoning and montery cheese together. I add these ingredients to flour tortillas and roll up in pan. I pour over mild enchalada sauce and put cheese on top. Bake at 350 for about 30 minutes

I really like salsa chicken! Just drop a couple chicken breasts (can be still frozen) in the crockpot, cover with layer of salsa and cook on high for 4-5 hours. Put chicken on tortilla with cheese and lettuce! YUM!

One of my favorites is "Chicken enchilada cassarole".

Ingredients: 3 cups of basic white sauce with 2 cans of mild green ortega chilis added, 1 package corn torillas, 1 rotisserie chicken shredded, 2-3 cups shredded cheese

Layer in cassarole dish- sauce, corn torillas, shredded chicken, shredded cheese. Repeat layers ending with cheese.

Bake at 350 until hot and bubbly. About 45 minutes!

Oh, don't ya just love the folks who aren't reading what's required first? LOL

Here's my favorite recipe:

Pepper Stuffed Chicken

* 1 Tbls Olive Oil
* 1 onion, chopped
* 2 red bell peppers, cut into strips
* 2 cloves garlic, pressed
* salt & pepper to taste
* 1/2 tsp. oregano
* 1/2 tsp. basil
* 1/4 c. Feta cheese
* 4 chicken breast (with skin & bone)
* 3/4 c. white wine (I use Apple Fruitesia from Shaws market)
* 1 T. butter

Preheat oven to 425 F.

In a skillet, heat the olive oil, add the onion, pepper, garlic, salt & pepper, and herbs and cook until onion is translucent and peppers are soft. Let cool. When cooled, add the cheese, tossing well to distribute.

In the meantime, prepare chicken. Loosen the skin of the chicken and stuff 1/4 of the mixture in between skin and flesh. Sprinkle the tops with salt & pepper and place in a metal baking dish.

Roast chicken for about 30 to 40 minutes (mine needed about an hour, and I checked them with a meat thermometer first) or until chicken juices run clear when pierced. Remove hte hcicken from the pan and keep warm.

Heat the pan on the stovetop, about med. high heat. Add the white wine and using a whisk, get all the browned bits. Let the pan juices reduce reduce to about half. Remove the heat, add the butter, whisk well, and serve over the top of chicken.

I love to cook, and I love to eat! I suppose my most favorite (right now, because of summer) is BLT's with corn on the cob. I am in Iowa and this is the time for wonderful Iowa sweet corn. I will also be making corn chowder several times, because it is best when the corn is fresh!

I love to cook with soups so hopefully this will count as homemase but we love the one dish chicken bake that is on the side of the stoffer's chicken flavored stuffing cannister. It goes like this...

1 pkg (6 oz) Stove Top Stuffing Mix for Chicken
1 lb boneless skinless chicken breasts,
1 can (10-3/4 oz) condensed cream of mushroom soup
1/3 cup milk

Preheat oven to 400°F. Prepare stuffing mix as directed on package; set aside.
Mix soup and milk; set aside.
Place chicken in 13x9-inch baking dish; top with soup and milk and then the stuffing.
Bake 30 min or until chicken is cooked through.

My favorite home cooked meal is tacos. I know that is boring, but that is my all time favorite comfort food. My husband loves it when I make chicken with home made alfredo sauce. It's really easy. I mix evaporated milk with flour and add garlic. That's it. I think it is even better if you start with butter, add flour to make roux then add the evaporated milk. Add cooked chicken, sauted mushrooms and serve over noodles with garlic bread. Now I am hungry!

One of my favourite meals is Tuscan Garlic Chicken from the Olive Garden web site. http://www.olivegarden.com/recipes/recipe_search/recipe_display.asp?id=99 I make mine with penne pasta instead of fettucine, and I found the recipe needs salt and pepper to taste.

Instead of placing the chicken on foil balls, I slice 2 med. onions in half and use them to set up the chicken, and toss in some celery and baby carrots.

cold water, whole chicken, slow to the boil, then let it simmer for hours.
Get everything of the chicken out,
get the meat, put it back in little pieces. Put a bit of vermicelli in, thin slices of carrot. Yummy!!
