WFMW: fast & easy eggs

My DD likes scrambled eggs, either by themselves or in a sandwich, Mc-style. I don't always have time to stand at the stove stirring eggs during our morning rush, though. Thanks to this simple method, I don't have to!

Take a standard size coffee mug and spray the inside with non-stick cooking spray. Crack one egg into the cup and beat with a fork. If you're going to put this on a sandwich, stop there. If you're going to eat these on a plate, add in a tablespoon or so of water and beat again. Cover the cup with a paper towel and microwave for 30 seconds. Check for doneness- if it's still watery looking, keep cooking at 15 second intervals until done. (In my microwave eggs usually take exactly one minute, but that may vary with egg size and different microwaves.) Empty the egg "patty" as it is onto an English muffin and top with cheese, or, fluff eggs with a clean fork and place on a plate.

Voila! A hot breakfast in under two minutes.... it definitely works for me! Check out more Works for Me Wednesday tips over at Rocks in my Dryer.

Our local bagel shop does bagel sandwiches this way, but they use a tupperware container to do the eggs. I am just not comfortable using one regularly though, so thanks for the mug tip!

This is how I would "cook" my parents breakfast in bed when I was a little girl...I probably over-cooked them at that time, but they were good parents and they ate them anyway ;)

Wow--great minds must think alike! I posted the same idea last night--I'm two posts after you :) My microwave must be stronger, though, since it only takes 30 seconds in mine. Too cool!

That's a great idea! I wonder if it will be cheaper to do my own breakfast sandwiches this way than buying the ones pre-made at HEB. I'll have to price that out!
